3 Spring-ish Recipes for Lazy People

So, you’re feeling extremely sluggish but you want to eat something tasty?

Welcome to the club, fellow lazy-ass.

Have no fear, because I have 3 gourmet recipes that can be made in your microwave! Yes, that’s right. You heard me. I have used the word gourmet and microwave in the same sentence. These can be your go to ideas for a delicious breakfast, lunch or snack. Dinner is on you my friends and deserves to be made in an oven my friends (or ordered in).

Greek Style Eggs

What you need:

  • Feta (obviously)
  • Spinach: fresh or frozen
  • 3 Eggs
  • ⅛ cup chopped onions
  • A tiny bit of milk
  • ⅛ cup of red peppers chopped
  • Salt and pepper

In a bowl, beat the 3 eggs, add salt and pepper (however much you see fit), and a splash of milk.

Mix well and place in microwave for 45 seconds. After the initial 45 seconds stir mixture again and add your veggies. Microwave for 1:45-2 minutes. The eggs will turn into a soufflé type of creation which you can eat that way or scramble with a fork. Add feta on top and enjoy.

Pasta Primavera

What you need:

  • 1 cup penne or other short pasta
  • 2 cups water (or enough to cover pasta)
  • Fresh cherry tomatoes
  • Garlic salt
  • Salt
  • Parmesan cheese: grated
  • Microwaveable green beans: handful
  • Frozen Broccoli: handful
  • Tablespoon of olive oil

Place pasta in microwave safe bowl and cover with heavily salted water. (Pro tip: If you think you’ve salted the water enough for your pasta, you haven’t. Add more.)

Microwave for 8-10 minutes, stirring occasionally.

Strain cooked pasta and reserve tablespoon of water.

Microwave green veggies and halve tomatoes. Place mixture of vegetables in with the pasta and the reserved tablespoon of water with oil, coat with grated Parmesan cheese, and sprinkle with garlic salt. Microwave for another 45 seconds and enjoy.

Avocado Toast with Scrambled Eggs

What you need:

  • ½ avocado: mashed
  • Toast (or thick bread untoasted)
  • 2 eggs
  • Tablespoon of milk
  • Salt and pepper
  • Hot sauce (necessary because it is hot sauce after all)
  • Shredded cheese of your choice (just a pinch)
  • Halved cherry tomatoes 4

Smear (yes, smear) avocado onto your piece of toast. In a bowl beat eggs and add the bit of milk with salt and pepper to taste. Microwave for 1:45 minutes, stir and add cheese, then for another 1:45 minutes.

Salt and pepper the avocado, then add eggs on top. Place sliced cherry tomatoes on top as well (this gets a little tricky to eat, but you’ll be glad you did). Sprinkle with hot sauce and enjoy.
